Four can't miss holiday recipes

silverwareDuring this season of joyful holiday celebration, we send our well wishes for health and happiness. We believe that part of holiday joy involves gathering at the table with those you love to share warm conversations, lots of laughter and wonderful recipes.

Keep in mind, all foods can fit into a healthy lifestyle when they are consumed mindfully and appropriately. We invite you to try these recipes and wish you a very Merry Christmas!

Appetizer: Hot Artichoke Parmesan Spread

Ingredients
1 cup grated parmesan cheese
1 cup light sour cream
½ cup light mayo
1 teaspoon minced garlic
1 (14-ounce) can artichoke hearts, packed in water and chopped
2 tablespoons sliced green onions

Directions
Mix first 4 ingredients together; gently stir in artichokes. Cook in microwave for 2 minutes or until cooked, stirring after 1 minute. Stir before serving, and sprinkle with onions to garnish.

Main Dish: Simple Lemon Herb Chicken

Ingredients
1 lemon
Salt and pepper to taste
1 tablespoon olive oil
1 pinch dried oregano
2 sprigs fresh parsley
2 pounds chicken breast

Directions
Cut lemon in half and squeeze juice from half lemon onto chicken. Season with salt. Let sit while you heat oil in small skillet over medium-low heat. When oil is hot, put chicken in skillet. As you sauté chicken, add juice from other half of lemon, pepper and oregano. Sauté 5 – 10 minutes each side or until juices run clear. Serve with parsley for garnish.

Side: Cranberry Salad

Ingredients
2 cups cranberries
1 small red apple cored (leave on peel)
2 small (4-ounce boxes) sugar-free red gelatin
1½ cups boiling water
½ cup orange juice
1 cup crushed pineapple, drained
1 banana, chopped

Directions
Put cranberries and apple in blender, cover with water, chop and drain well. (If you use a food processor, omit water and draining steps.) Set aside. Mix gelatin with boiling water. Cool. Add gelatin with cranberry mixture, plus orange juice, pineapple and banana. Chill until set.

Dessert: Health Nut Peanut Butter Balls

Ingredients

peanut butter balls

1 cup peanut butter
½ cup honey
¾ cup wheat germ
1 cup Grape Nuts cereal
1 cup Rice Crispies cereal
Ghirardelli chocolate

Directions
Mix ingredients together. Roll in additional wheat germ. Melt chocolate and drizzle on top. Store in refrigerator.
